Chia Seeds Pudding Recipe

Mornings are the best time to eat the healthiest of foods. You can start your day with real wholesome and nutritional breakfast and you have a long day in front of you to digest it. However, I cannot just eat random healthy breakfast that is not good to my tongue. If you agree on that then this chia seeds pudding recipe is perfect for you. 

Another plus is that you can prepare it a night before and enjoy chilled from the fridge the next morning. I make this one with coconut milk because the taste is just perfect even without adding any sweetener and the texture is pretty good.

Chia Seeds Pudding

For 1 serving

3 tablespoons white or black chia seeds
3/4 cup unsweetened coconut milk
1 teaspoon pure vanilla
2 teaspoons honey or agave syrup (optional)
Fruits of choice for topping

In a pudding bowl or mason jars like mine, stir together chia seeds, coconut milk, vanilla, cinnamon, and honey (if using). Refrigerate overnight as chia seeds will expand, soften, and absorb liquid. Top up with berries and fruits that you like and enjoy.
