My husband never really cooks but his sweet tooth from time to time instigates him to dirty his hands in dough, cacao and agave. So, recently he decided to surprise me with some healthy truffles by using this recipe and I am glad he did because they were a perfect blend of peanut butter, chocolate and just enough sweetness.
Without wasting more time, here’s the recipe that you can sweeten your Sunday with and not be regretful.
- 2 Tbs Raw organic peanut butter (You can adjust this depending on your love for peanut flavour)
- 3/4 cup almond flour
- 1 tbs organic cacao/cocoa powder
- 12 pitted dates (soak for 5 minutes in warm water before using)
- A dash of agave or honey if you like things a little too sweet. I prefer a balance of bitter chocolate and sweet, which you will get with the dates alone.
Blend everything together in a food processor till you get a thick rough consistency. Do not fret seeing the sticky mess because that’s exactly what you want. Scrap out the mix and roll into small balls. Top with your favourite nuts and berries or just about nothing and hog them away!
