Does Beetroot as a word repel you? If yes, then shake hands. Sadly, most things healthy do repel us….UNTIL we try them in interesting ways. 🙂 Coming season try this beetroot soup and you shall only keep making it ever after. Extremely easy to make and so so full of nutrients.

It is best to have beets raw for complete health benefit but including them in your diet cooked is a great way as well. Start with this simple to make beets soup.
Ingredients for 2 big servings and 4 small.
3 medium Beets
2 small or 1 large clove of garlic minced
1 inch ginger grated
1 yellow onion chopped
1 bay leaf
1 cup organic low fat coconut milk (optional)
Parsley for topping or any herb you like such as Cilantro
Salt and freshly grounded pepper to taste
- Wash and chop the beets and onion.
Heat 1 tbs oil in a cooking pot. When heated, add bay leaf. Once the oil is fragrant, discard the leaf and add onions. Stir for about 6 minutes and add ginger and garlic. Keep stirring till the raw smell goes.
Now add the chopped beats along with 4 cups of water. Cover the pot and let the beets cook for approximately 25 minutes or till they becomes soft and mushy. Use a fork to check.
Once the beets have cooked, leave them to cool and then puree them along with the remaining water in a blender.
Now pour the pureed beets back in the pot and heat them on simmer. Add salt and pepper as per taste. At this point if you want you can add coconut milk if you like the taste.
Once done, serve it hot with fresh chopped parsley on top.
Also, I think soups can really be made as per once taste. Reminds me of my sister who adds chilli flakes and lemon to all her soups to make them taste yummier. It is a matter of personal choice but I believe every vegetable can be had in a way more tastier than usual. What ya think?
